A bright, vinegar-forward habanero hot sauce that's hot but not punishing — boiling the chilies tames the rawness and the vinegar keeps it acidic and loose. What makes it work as an everyday sauce rather than a novelty is the balance: habanero heat up front, green chilies for herbal depth, and garlic underneath. Pour it on anything that needs a kick.

Notes
We love this sauce. It is not burning hot and has a really good kick when you need heat in the food
Variations
- Milder — swap habaneros for jalapeños or serranos.
- Fermented — salt the ingredients and ferment 3–5 days before blending for more depth.
