The quickest laddoo in the Indian sweet repertoire. Desiccated coconut is cooked briefly with condensed milk until it comes together as a pliable dough — no sugar syrup, no long roasting, no thermometer. The condensed milk handles both binding and sweetness. The one technique rule: cook until the mixture leaves the sides of the pan cleanly. Pull it too early and the laddoos will be too soft to hold their shape; push it too far and they'll be chewy and dry.

Ingredients

Base

  • 2 cups (180g) desiccated coconut, unsweetened
  • ¾ cup (240g) sweetened condensed milk
  • 1 tbsp ghee

Flavoring

  • ½ tsp cardamom powder
  • Pinch of saffron soaked in 1 tbsp warm milk (optional)

Finishing

  • ¼ cup (25g) desiccated coconut, for rolling

Instructions

Toast

  1. Heat ghee in a non-stick or heavy-bottomed pan over medium heat.
  2. Add the 2 cups of coconut. Stir on medium heat for 2–3 minutes until the coconut smells fragrant and the edges just start to turn the faintest gold. You're not toasting it deeply — just waking up the flavor. Don't let it brown.

Cook

  1. Pour in the condensed milk and saffron milk if using. Stir immediately to combine everything.
  2. Cook on medium heat, stirring constantly, for 8–10 minutes. The mixture will look loose and wet at first. Keep stirring — it will gradually thicken and pull away from the sides.
  3. The mixture is ready when it collects into a single mass that moves with the spoon and leaves the sides and base of the pan cleanly. If you drag the spoon through the centre, the gap should hold for a moment before slowly closing.
  4. Remove from heat. Stir in cardamom. Let cool for 10 minutes — it should be warm enough to be pliable but cool enough to handle.

Shape

  1. Spread the extra ¼ cup coconut on a small plate for rolling.
  2. Pinch off portions roughly the size of a large marble and roll between your palms into smooth balls.
  3. Roll each ball in the extra coconut and press lightly so it adheres.
  4. Set on a plate. The laddoos will firm up further as they cool to room temperature.
